Very evenly roasted. Once the hot water hit the beans, there was a wild amount of bloom. Obviously, these beans were very fresh!

V60: The coffee prepared this way didn’t have as much natural sweetness as some of the later methods I tried – I wrote in my notes that the deep flavor could be really pleasing for dark-roasted coffee fans who wanted to elevate their morning cup beyond what they might be able to get at the grocery store. On that topic, there are murmurings that dark-roasted coffee could have a comeback/resurgence in 2019.

Chemex: To me, this tasted sweeter and more interesting than when brewed in the V60 – it had notes of semisweet chocolate to it. I did brew it on the shorter side – only 3 minutes instead of my usual 4, and I think the coffee benefited from it with a nice rounded and pleasing flavor.

French press: This had the “dark” flavor of the V60 but with a buttery richness that was quite good.

AeroPress: Fudgy texture and flavor. Sweet chocolate bomb. Wow!

Summary: This Colombian coffee was roasted more darkly than I usually get (as evidenced by the bit of oily sheen on the beans) so the resulting flavor had more chocolaty undertones to it. Good cup that will please a wide variety of coffee drinkers. The flavor, from most to least sweet, was: AeroPress, Chemex, French press, V60.

From the roaster: No tasting notes provided

At the moment, Prosum doesn’t appear to sell their beans via their website but they may in the future as they do have a link to an online store on their page. In the meantime, visit their roastery on Los Arboles Ave NE in Albuquerque in the morning hours, Mon-Fri if you want to pick up a bag for home.

Prosum Roasters

Review conducted 7-8 days post-roast.

This is the second coffee I got over the holidays from Prosum Roasters; you can read more about their company mission and my visit to their roastery here.
